The rapidly evolving pressures brought about by the growth of eCommerce are one of the 4 mega trends that have also affected the food service industry. eCommerce, combined with the growth of urban population have been further accelerated by eLogistics - or the Digitalization of supply chain operations. Additionally, the gig economy has created a new type of "un-employee" that is dramatically different than the traditional workforce.
Research spanned the length of the supply chain, from Distribution Center to the Store and with processes ranging from manual 2 wheel dolly's to unitized loads delivered with the assistance of powered lift trucks.
One example demonstrating the high cost of on-demand delivery. Two drivers, employed full time, fulfill deliveries to just 13 fast food restaurants. Only 25% of their time is spent on the actual delivery process. 25% is spent "re-picking" items in the trailer and nearly half of their time is spent driving.
The manual, 2 wheel dolly approach to delivery is described in this typical task breakdown. The issue of excessive Time to complete the delivery is complicated by the Physical nature of the job with its inherent risk of injury and the increased likelihood of errors which are very costly to correct.
